Introducing the Sourdough Flakes

Dear ones,

Many of you have been asking a lot about the sourdough starter and how to make it at home or if I could share part of it via postal service.

Even though, it is not easy to share the active liquid starter, it is possible to dry it and share it with you! This is how the idea to create the sourdough starter flakes came.

The recipe of the sourdough starter requires love, care and patience just like every other slow, natural and pure food creation.

It might take from one week to 10 days to develop a fully grown and strong sourdough starter. It is a slow process where nature wants you to be attentive and patient, slow down and respect the time needed for natural development. Then you also got to be attentive to retain and preserve the sourdough starter at a good state after that, almost like a pet and a living system residing at your kitchen counter.

sourdough flakes

The small bag contains a dormant community of sourdough resident microbes naturally dehydrated. This is an amazing way to share with you the goodness of the homegrown sourdough starter developed at the studio and at the same time a sustainable way to repurpose the otherwise discarded sourdough starter between the feedings.

The sourdough flakes provides you with an initial starter that helps you to take a step further in the process of sourdough starter creation and speed up the process.

Before using the sourdough flakes, you shall follow the process of revival of the flakes to a strong sourdough starter suitable for baking. It is an easy procedure when you decide to slow down, take the time needed and fully immerse yourself in it. See the changes at your sourdough starter, see it bubble and grow day by day.

Give it your energy, love and attention.

Make it yours.

Notice the changes.

Notice the flavour profile changing with your choice of flour and percentage of water.

Notice the scent changing with time.

Notice the texture turning from grainy to gummy and gluey.

Notice the goodness of the wholesome organic living foods in your life and what it does to your body and moods.

Then notice all that devotion coming back to you in the form of an amazing grounding and nourishing sourdough bread, focaccia or other baked goods.

Love,

Alexandra
