Kombucha


Kombucha is a fermented cold tea originating from Asia. In its essence is the fermented sweetened black tea by the SCOBY (Symbiotic Culture of Bacteria and Yeasts) a symbiotic biofilm consisting of yeasts and bacteria. This symbiotic biofilm is also often know as 'the ‘mother’.

The product of this fermentation contains probiotics, good bacteria that support the good health and balance of our gut microbiome and the health of the inner lining of our intestines. Aiding the gut to absorb the nutrients in the most efficient way possible and heal the potential inflammations existing in our gut due to imbalances of the gut flora, due to allergens or pollutants and toxins found in the foods, water and medicine we are ingesting.

Kombucha tea provides good hydration to the body especially during the warm days of the summer as it consists mainly of water (95%). The rest is carbohydrates, vitamins of the B complex, such as thiamin, riboflavin, and vitamin B6. It is suggested to have antioxidant properties, helping the liver function and cleanse, as well as providing probiotics to balance out the human beneficial microbiome.


We will meet the days when the moon is slowly filling towards her fullness, to connect to the biology and chemistry of the process of fermenting tea and other herbal infusions.

While black tea is not a local plant and product in Greece, we will ferment infusions from local medicinal herbs and plants in order to craft kombucha guided by the essence of the local flora and terroir. Some of the herbs that can be used is verbena, mountain tea, chamomile among others.

Fermenting tea with the ‘mother’ is a beautiful example of biological symbiosis between our bodies and the beneficial microbes in the great ecosystem and natural world. A great example of how the smallest of cells contribute with their own functions of digestion of organic matter to the wellbeing of our own bodies.

A symbiotic relationship that is humbling and is opening up a place of belonging and positioning into this great ecosystem of the Mother.

We will craft this ancestral recipe in togetherness in connection to the ingredients as well as to our bodies and to the body of the Earth.

By the end of the ritual, you will leave with your own SCOBY to continue crafting your own fermented infusions at home all the while feeling more connected to your body, to the natural processes and to the body of the Earth.
