The meditative moment of food preparation and food consumption becomes a sacred ritual. The stillness, the connection to the ingredients, slowing down and appreciating the resource akin to a meditative process that evokes emotion and memories, ancestral connection to the common resource and healing.

THE FOOD

The food is pure, local and seasonal. Locally sourced and processed as far as possible using traditional techniques of food handling such as fermentation and pickling. Variety is not the focus. Whatever the season has to offer. The focus is on the highest quality of each of the food elements. Minimal offerings with the maximum of impact in the experience of taste, soul healing and connection with the ancestral paths. 

The power of three. Three good ingredients is enough even if that is a handcrafted freshly baked sourdough loaf of bread, a cold pressed local olive oil from wildly grown olives, sea salt harvested by the sea.

THE AWARENESS  

Mindfully choosing the ingredients and food resources according to what the body needs at this specific moment and with respect to the seasons. Respect the abundance and all that is given. 

Being aware of our thoughts, sentiments, and intentions while preparing and transforming the resource. All our intentions and emotions while handling will be transferred to the resource to be consumed. Be attentive and careful of the energy you give to it.

THE FOOD SETTING

We take a moment of stillness to focus on the table setting and reflect on the ingredients. Using natural + sustainable materials in minimal settings that reflect the authentic and essential identity of the food we place on the table. Utensils, tableware and furniture made from natural materials that can be decomposed and returned back to the earth as elements to create something new. Clay, stone, wood, linen, cotton, steal. Form, texture, colours overlapping with the essence of the food offered and completing the setting as one. 

THE CONNECTION

We gather around the table together and connected to share the same food resource prepared with love and care for ourselves and the earth. We create trust to each other by sharing the common resource, we share stories, we bond, we become vulnerable and stronger together.

SENSORIAL FOOD 

We eat with our eyes first, we engage in the food rituals with scent, touch, taste, hearing, textures and ... intuition.
Sensorial food is the food that invites us to pause, slow down, be present in the very moment of food preparation or food consumption.
Observe the resource and connect with it, appreciate it and respect it. 
Notice the changes in the organic matter when we handle it. 
Notice the changes when we consume it.
Notice the feelings and emotions that arise with it.
